Duties:

- Ensures menu planning and development and establishes cooking schedules using standardized recipes, production and waste sheets.
- Monitors and evaluates meal preparation and service to ensure established standards are maintained
- Places orders and maintain proper inventory levels and handles all Catering requests
- Retail marketing, staffing, training, scheduling, preparation of reports, cost menus, perform administrative duties including banking
- Ensures responsible financial performance through cost control, promotions and results-orientated management
- Ensure strict compliance with Compass Quality Assurance and Health & Safety programs, Occupational Health & Safety Act and WHMIS regulations.  Follow and maintain all facility standards, practices and regulations
- Ensure positive client relationships are maintained and client satisfaction with service and menu options

*These positions are in a Correctional Facility which runs 24/7*

Qualifications:

- Journeyman/Redseal certification required
- Three years cooking experience in a relevant cuisine environment
- Management/Supervisory experience in a food production environment, including basic financial skills with the ability to control food and labour costs
- Working knowledge of all phases of food preparation and production and be able to cook for 200+ people per day
- Detail-orientated and ability to thrive in a fast paced environment with changing priorities
- Able to successfully pass a criminal background check
- Excellent customer and client relationship skills
- Excellent communication skills (written and verbal)
- Working knowledge of Microsoft Office in Outlook, Word and Excel
- Strong supervisory skills and with proven ability to motivate, lead, and coach staff
