As an experienced Executive Pastry Chef for a luxury French Patisserie,you will be responsible for the overall operational management of entire Pastry team and personnel.
QUALIFICATIONS/REQUIREMENTS
-Two to four years related experience and/or training; or equivalent combination of education and experience
-Fifth year college or university program certificate
-Proficiency in French and English communication is a must
-Technical Culinary Diploma
-Pastry Chef or Pastry Sous Chef position in a world class Property or Restaurant
-Strong International Food Exposure
The Executive Pastry Chef will be responsible for the below:
-Departmental Organization of entire pastry and baked goods
-Development of food related Standards of Procedures
-Writing all food product purchasing specifications for dessert and bread programs
-Quality Control including but not limited to
maintaining highest standards of food product and kitchen sanitation, storage, and handling procedures
-Standardization (by department and product position) of: all menu and dessert production recipes, and finished product specifications
-Personnel Management of kitchen staff
-Financial, Administrative, and Supervisory duties as required
