Cut, clean and trim carcasses into primal cuts for further cutting, processing or packaging. Remove defects, bruises or blemishes along with any excess fat. Remove parts such as skin or bones from carcass and perform meat cutting and trimming according to specifications using knives, meat saws, band saws. Process primal parts into cuts that are ready for retail, customer use or for further processing. Package processed products according to specifications. Move processed products into refrigeration units and / or freezers for storage. Sanitize equipment, machines and work areas throughout the work day
