Sushi Chef Job description:
The sushi chef must have prior experience in Sushi preparation and rolling.
require skills are:
Nigiri and maki
cutting sashimi(prepare and cut all kinds of different fish)
Knowledge of and ability to prepare stocks.
Responsibility for production, ordering and
receiving, merchandising, controlling inventory sanitation,
Safety and clean kitchen and storage area to satisfied the requirement of food inspection;
Ensuring compliance with heath department and weights and measures requirements;
Filleting fish, and preparing sushi to fill sushi case and customer orders;
Assisting with menu planning and development including creativity and experimentation with new trends and menu ideas and recipes for sushi Maintaining a high degree of cleanliness throughout preparation area.
Complete understanding of kitchen operations
Besides the sushi chef will also find his or herself managing and training others in the kitchen as well as handling their own station.
