Description

Grant Hall Hotel is opening a new fine dining restaurant and is seeking an experienced, detail-driven Fine Dining Restaurant Manager. This hands-on role is essential to the restaurant's successful launch and ongoing operations. The ideal candidate is highly organized, comfortable with close operational oversight, and able to deliver refined service aligned with a French cuisine concept with Japanese influences.

Key Responsibilities

Manage front-of-house fine dining service, including floor execution, pacing, guest flow, and service recovery, while maintaining consistent service standards and accuracy.

Develop, implement, and maintain fine dining service standards and training programs. Recruit, train, coach, and mentor service staff; conduct detailed training on etiquette, food and menu knowledge, and guest interaction. Monitor staff performance and provide immediate corrective guidance, enforce grooming, uniform, and professional conduct standards, use professional language with guests at all times, and build a disciplined, service-focused team culture.

Work closely with the Executive Chef and kitchen team to align service flow with menu execution, ensure clear FOH and BOH communication during service, and coordinate menu changes, tasting, and service updates. Oversee reservations, seating strategy, VIP guests, and special occasions with elevated attention to detail, and maintain guest profiles, preferences, and service notes where applicable. Ensure compliance with health, safety, and liquor regulations.

Qualifications

Proven experience in fine dining restaurant management required.
Strong knowledge of fine dining service etiquette, wine service, and elevated guest experience.
Demonstrated ability to manage details, enforce standards, and maintain consistency.
Solid understanding of wine programs, cocktails, and responsible liquor service.
Ability to remain calm and decisive in high working-pressure service environments.
